Genus:Dioscorea
Species:polystachya
Family:Dioscoreaceae
Chinese Yam was brought to this region as early as the 19th century for both culinary and cultural purposes, but it is now recognized as an invasive species in numerous states. Its range has expanded from Louisiana to Vermont, where it can create thick tangles of vines that smother and kill native plants, including trees, in various moist and disturbed environments.
This perennial vine, which produces tubers, can reach heights of over 11 feet and features long-stalked, glossy green leaves shaped like hearts. It may occasionally produce small clusters of flowers in the axils of its leaves. The tuber itself can grow between 2 to 3 feet in length and is edible both raw and cooked. It is recommended to prune the plant back to the ground in the spring.
