The Gongylodes Group of Brassica oleracea refers to kohlrabi, a robust and compact variety of cabbage. The term "Brassica" is derived from Latin, meaning cabbage. This plant produces edible swollen stems that resemble turnips and can be white, green, or purple in color. For optimal growth, kohlrabi thrives in the cooler temperatures of spring and fall, as it struggles to produce well when daytime temperatures exceed 80 degrees Fahrenheit.
Due to its shallow root system, applying mulch can be beneficial for kohlrabi, as it helps retain moisture and suppress weeds.
The ideal time to harvest kohlrabi is when the bulbous vegetable measures between 2 to 3 inches in diameter, ensuring the sweetest and most tender flavor. If left to grow larger, the vegetable may become tough. In addition to boiling, steaming, or baking, the leafy tops can be harvested and enjoyed raw in salads or slaws.
While less common, red varieties of kohlrabi are also available.
